Here is the link to the Liberty Ship Plans. Building from scratch is very satisfying, and the quality of model depends on how much work you want to put into it.

A liberty ship can be scratch built from plans. As far as wooden kits go, if you can find one, it is not a liberty ship, but a C-2 Cargo vessel, the sterling American Scout is a lovely model.

I bought mine from Battlers Connection in Florida. East to match their hull with various plans.
Hull was accurate and made of heavy section glass fibre.

As well as the kit shown in previous reply, Deans also sell a grp hull and plans fo a liberty ship. The will also sell most of the fittings leaving the builder to make the decks, superstructure etc...
