Hi Pat, I hope I can help.
From memory I remember the following beautiful models that, perhaps, fall within your parameters.
They work very well under sail, driven only by the force of the wind.

Hi Pat, if you haven't already look up Sarick Hobbies they have plans and hull with plans kits that might interest you. For your interest i've attached some pics. The sloop is Starlet by Vic Smeed and the schooner is a Grand Banks schooner, similar to Bluenose. All scratch built and currently gathering dust in my loft model room as life has not be kind to modelling for the past few years -hoping to change all that this year. I've also got a Dragon yacht in build.

You may have a look at my Finkenwerder Fischewer.(See my harbour.
She has no motor, no keel. Sailing is only with steady and low wind.

Hi Pat, are you referring to square rigged ships? Not something I've done but have an interest in doing.

Hi Shipmates

Does anyone specialise in building sailing ships that can be sailed ie can move as a real sailing ship does without the use of a motor

I am referring to traditional ships and not modern yachts - if so would love to see some of your efforts
