Daggerboard not quite big enough? Perhaps it should go straight down. Bigger, heavier daggerboard may make her better in a breeze.

My Club's schooners have rudders that are adjacent to and reach to the base of the fin. This helps with the weed in our pond. I am well aware of your issue with coming round into wind and in my opinion its best to go round the other way, certainly on my lake as otherwise you end up in the thick weed at the far side of the lake. Might not win you any races but my legs are not as young as they used to be, and this is my hobby not exercise time!
I'm sure you will find the best compromise, model looks great.

    Well that makes since πŸ˜ƒ

I have more to do yet to the schooner. You know I try not to use bulbs but with this one I cannot get it to sail in a breeze other than a mild one. It has a dagger board as seen here, but this might need to become more of a fin as I did on the Wianno Senior.

In a mild wind it side slips and doesn’t come around into the wind very easily to the Starboard. The wind was at my right-side on a close haul. Make sense? 🀣

She looks nice with the gaff rig, perhaps a bit more ballast if you try her with this rig again.
That schooner looks good too, well balanced rig but perhaps slightly overcanvassed in a blow, Shut up Nerys your trying to teach your grandmother to suck eggs.

    cheers, Nerys

The gaff rigged schooner was overwhelmed with the winds yesterday, but this morning I will tried again as the lake is much calmer. It was nice and gentle, only the fourth time on the water.

Thought I’d try sailing this scratch built sailboat using a Gaff rig borrowed from one of my other sailboats.

Winds today at the lake are 17km with gusts to 27. I kept it close to me and not beyond the dock.

Tomorrow will try with lighter winds.
