Hi always nice to seee a saling boat being built. My last test when the sail boat is finished and ready to hit the water is my upside down test.
Hold the model hopefully by its mast and turn the model upside down and see what falls out or off!
A loose battery can easily come free and take the cabin roof with it.
The weather out there on the lake can throw a boat around and having all secure is a good way to start.
Also I try to make sure that I can lift out the model from the water by its mast (s). This is a good check on the shrouds connection to deck or where ever.
What is underestimated is the servo power needed to operate the rudder I always use a push - pull system either wire rodding or nylon covered fishing trace. They are usually larger in area than power boats and come under pressure when tacking into wind.

When the winds before the rain, soon you may make sail again, but when the rain's before the wind, tops'l sheets and halyards mind
The mast steps are in and the main mast squared to 1/2”x 1/2” below deck. The cabin roof is built and is removable. Lots of rooms below deck for RC gear.
The cockpit deck is also removable, I figure with the 1” coaming and 1/2” bulwark water shouldn’t be get into the cockpit. Once the ballast is established it should sail along nicely.
